Madeleines are french butter cakes, sponge like cookies, in shell shaped molds.  Traditional recipes include finely ground nuts, like almonds. A variation uses lemon zest or few drops of orange blossom water. With crisp edges and moist, they are better eaten right away within an hour after baking. I found it’s the easiest cake recipes and light, we normally eat it for goûter or tea time.
